1 Can diced tomatoes.
1 Tsp lime juice.
1 Tsp cilantro.
1/2 Cup mayonnaise.
1 Pound salmon on small pieces.
Sal and Pepper to taste.
Preheat saucepan for 2 or 3 minutes in medium high. On a separate bowl put canned tomatoes and mayonnaise until they are equally blended. Rinse salmon fillets on paper towel for 5 minutes. Using tongs insert salmon to tomato mixture and turn to coat both sides. Add salt and pepper to taste. Place salmon and tomato mixture into pan. Cover and cook over 6-8 minutes. The cooking time will vary depending on the thickness of the fillets. Serve with herb. Allow to be room temperature and serve with small pieces of baguette bread or gourmet crackers. Pour the remaining tomato sauce on a separate bowl aside of the dish. Serve and Enjoy.
This recipe I will recommend to do it when you have important guest at home like your parents in law!. I did this recipe one time for them and their first commend was "where did you learn this, is awesome". The truth is I learn it from my dad who is a chef. You can definitely do this in a larger scale with rice or some vegetables. But honestly it does not matter if it is as an appetizers or full meal you would be looking good in front of your guest. This is for a more glamorous night!!

hmmmmm ... I bet it would be good with mango instead of tomato ... my cousin has a tomato allergy :(
